South Indian Delight: Masala Dosa – Crispy Crepe with a Flavorful Potato Filling

MASALA DOSA
Masala dosa is one of the most popular South Indian breakfast. It is a dosa stuffed with potato masala.
First step is preparation of Potato masala
Ingredients:
Potatoes- 4 medium sized
Mustard seeds- ½ tsp
Hing/ asafoetida- ¼ tsp
Chana dal- ½ tsp
Urad dal- ½ tsp
Jeera/ cumin seeds – ½ tsp
Ginger – small piece finely chopped
Green chillies- 1 -2 chopped
Onion- 1, finely chopped
Cashewnut- 5 to 6
Curry leaves- few
Turmeric / haldi powder- ½ tsp
Salt – as required
Coriander leaves – to garnish
Oil- 1 tbsp.
Preparation Method: Step by Step
Boil potatoes in a pressure cooker for 8 to 9 whistles.
Once potatoes are nicely boiled let it cool. Then remove the skin and mash them.
In a kadai, take oil.
Once oil is hot add mustard seeds and let them pop.
Then add urad dal, chana dal, cumin seeds, curry leaves. Stir well.
Then and hing, green chillies and ginger, and cashewnuts. Saute until cahewnuts change colour.
Now add the chopped onions. Cook till onions soften.
Add boiled mashed potatoes along with turmeric powder and salt. Mix well.
Sprinkle some water so that the masala is not dry.
Turn off the heat and add coriander leaves.
Remove the pan from the stove.
Suggestions:
Boiled matar/ peas can also be added along with the potatoes.
DOSA Preparation

Dosa batter
Potato masala.
Preparation method
Heat a dosa tawa.
Once the tawa is hot, take a ladle full of dosa batter and pour it on to the center of the hot tawa.
Immediately, spread the batter evenly from the center in a circular motion to make a thin dosa.
Add oil on the edges of the dosa.
Let the dosa cook for some time until the bottom starts appearing golden brown. Only side of the dosa needs to be cooked.
Add the prepared potato masala on one side of the dosa and fold over the other side of the dosa onto the side of the masala or the masala can be put in the center and fold the dosa from the sides to the center.
Press the dosa with a spatula and remove it from pan.
Crispy masala dosa is ready to be served. Serve it with any chutney or sambar or can even be eaten plain.
