Wholesome Delight in Minutes: Instant Beetroot Thoran Recipe
Ingredients:
- 2 medium-sized beetroots, cut it in to small pieces.
- 1/2 cup grated coconut
- 1 green chili, finely chopped
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1 sprig curry leaves
- 2 tablespoons coconut oil
- Salt, to taste
Instructions:
- Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter. Then, add cumin seeds and curry leaves and sauté for a few seconds.
- Add cut beetroot to the pan and mix well. Cook for about 2-3 minutes.
- Reduce the heat to low and cover the pan. Allow the beetroot to cook for about 5-6 minutes, stirring occasionally.
- Add grated coconut and chopped green chili to the pan. Mix well to combine all the ingredients.
- Cover the pan again and let it cook for another 5 minutes, or until the beetroot is cooked through. Make sure to stir occasionally to prevent sticking.
- Once the beetroot is cooked and the flavors are well combined, remove from heat.
- Serve the beetroot thoran as a side dish with rice or roti.

Note: You can adjust the spiciness of the thoran by adding more or less green chili according to your preference. You can also try with grated beetroot as well.
