Simplicity at its Best: Elevate Your Cooking with a Simple Egg Curry

SIMPLE EGG CURRY

Ingredients:

  • Eggs -4
  • Oil – 1 tbsp
  • Onion – 3 finely chopped
  • Tomato – 1 Chopped
  • Ginger – a small piece chopped
  • Garlic – 6 cloves crushed
  • Green chilies – 2 slit
  • Chili powder – 3 tsp
  • Coriander powder – 3tsp
  • Garam masala – ½ tsp
  • Turmeric powder – ¼ Tsp
  • Mustard – 1 tsp
  • Salt – As per taste
  • Curry leaves – few
  • Water – one cup

 

Preparation Method: Step by Step

  • Wash and boil the eggs.
  • Once the eggs are boiled keep it aside for cooling
  • In a Kadai / Earthen pot take oil, add mustard, and allow it to flutter, then add curry leaves.
  • Add Onion, Ginger, Garlic, chilies and sauté well.
  • Once onions start changing the color add Chili Powder, Coriander powder, Turmeric powder and salt, mix it well.
  • Add the chopped tomatoes.
  • Lower the flame and cook till they are done.
  • Add water and allow it to boil.
  • Meanwhile remove the egg shells, make a slit and add to the curry.
  • Add the Garam Masala and Cook for two minutes.
  • Simple, delicious, egg curry is ready.
  • Serve it hot with Dosa, Rice, etc.

Suggestions:

  • You can use mustard/Coconut oil for nice flavor.
  • Garnish with coriander leaves.
